At the Boulanger de Monge, the quality and flavor of bread are a result of the use of natural products, for our organic breads and for our breads in the French tradition. The use of additives is always detrimental to flavor and preservation, which is why we only use 100% pure wheat flours, which allow us to produce breads with the aromas of the wheat and of the harvest. ![]() Even though European directives (which are less strict than the older French rulings) allow it, the Boulanger de Monge never uses additives, adjuvants—including fungal amylase—or any other corrector in its flour. From the mill to the oven, our flours are exclusively 100% PURE WHEAT. |
